Harbour Island History
Welcome to the renowned Jackson’s Bistro Bar & Sushi, where the only thing better than the view is the food. The area we now call Harbour Island was known as Seddon Island throughout much of the 20th century. Seddon Island was an area famous for its shipping docks, wharves, and warehouses. In the 60’s city leaders began efforts to clean up and revitalize the industrial waterfront area. In the late 70’s Harbour Island was given its new name and was announced. Over the next 20 years, a broad mix of single-family homes, high-rise apartments, and businesses were developed to transform the island into an upscale environment. Some of the early retail space struggled to keep tenants and were forced to close. The 20,000 square foot space that is now home to Jackson’s Bistro had been sitting vacant for over two years when acclaimed chef and restaurateur Jack Campbell established Jackson’s Bistro in 1997. The restaurant became an immediate attraction and success and is still standing in the same location over two decades later.
Who is Jack Campbell?
Jack Campbell started his first restaurant job in Ft. Lauderdale, FL in 1967, as a dishwasher at the age of 15. Over the next few years, he was promoted through the ranks until he was appointed as Chef de Cuisine, the youngest chef in a 100-year-old restaurant chain. In December of 1997, Jack Campbell established Jackson’s Bistro. Since then, Jack has managed, consulted, designed, and directed a multitude of restaurants throughout Florida before opening Jackson’s. While Jack has hung up his chef’s apron, the current head chef, George Aviles, has an equally impressive resume. Chef Aviles graduated with a degree in Culinary Arts from Le Cordon Bleu College of Culinary Arts in Orlando in 2008. Aviles sharpened his skills in a range of restaurants in New York City, including the prestigious SOHO House as Sous Chef, before returning to Florida.

When planning a private event, you provide the occasion, and we’ll provide the space, food, and drinks, for an above & beyond experience. Whether a social or corporate event, Jackson’s has a range of settings to perfectly compliment your gathering. Our spaces include the Wine Room, BackJack’s Lounge and Waterfront Room. Our rooms can be utilized for intimate group dining, to exclusive receptions for up to 120 guests.
